Slow Cooker Beef Stew Recipe

Ingredients:
– 2 pounds beef stew meat, cut into 1-inch cubes
– 1/4 cup all-purpose flour
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 1/2 teaspoon garlic powder
– 1 tablespoon olive oil
– 2 cups beef broth
– 1 cup red wine
– 1 tablespoon Worcestershire sauce
– 1 tablespoon tomato paste
– 1 teaspoon dried thyme
– 4 cloves garlic, minced
– 1 bay leaf
– 1 onion, chopped
– 3 carrots, chopped
– 3 potatoes, peeled and chopped
– 2 celery stalks, chopped
– Fresh parsley, chopped (optional)
Instructions:
1. In a mixing bowl, combine the flour, salt, black pepper, and garlic powder. Add the beef cubes and toss to coat.
2. In a large skillet, heat the olive oil over medium-high heat. Add the beef and cook until browned on all sides. Transfer the beef to a slow cooker.
3. In the same skillet, add the beef broth, red wine, Worcestershire sauce, tomato paste, dried thyme, minced garlic, and bay leaf. Stir to combine and heat until the mixture is simmering. Pour the mixture over the meat in the slow cooker.
4. Add the chopped onion, carrots, potatoes, and celery to the slow cooker. Stir to combine.
5. Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours.
6. Remove the bay leaf from the slow cooker. Serve hot, garnished with fresh parsley, if desired.
