- 2 lbs beef chuck, cut into 1-inch pieces
- Salt and pepper
- 3 tbsp vegetable oil
- 1 large onion, chopped
- 2 tbsp tomato paste
- 3 cloves garlic, minced
- 1 tbsp smoked paprika
- 1 tsp ground coriander
- 1 tsp ground cumin
- 2 cups dry red wine
- 2 cups beef broth
- 4 medium carrots, peeled and sliced into rounds
- 4 stalks celery, sliced
- 2 bay leaves
Instructions:
- Season the beef generously with salt and pepper.
- In a large Dutch oven or heavy bottom pot, heat 2 tablespoons of oil over high heat until shimmering.
- Working in batches, sear the beef until browned on all sides. Transfer to a large bowl and set aside.
- Reduce heat to medium-high and add remaining tablespoon of oil.
