Ingredients:
For the ice cream:
- 2 cups heavy cream
- 1 can sweetened condensed milk
- 1 teaspoon vanilla extract
- 1 cup mashed fresh strawberries
- 1/2 cup chopped fresh strawberries (optional)
For the shortcake:
- 1 1/2 cups all-purpose flour
- 1/2 cup sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup milk
- 1/4 cup butter, melted
- 1 egg, beaten
- 1/2 teaspoon vanilla extract
Instructions:
1. First, we gonna make the shortcake. Preheat your oven to 375°F and grease a 9-inch cake pan.
2. In a mixing bowl, combine the flour, sugar, baking powder, and salt. Stir in the milk, melted butter, egg, and vanilla extract until just moistened. Pour the batter into the prepared cake pan and bake for 18-20 minutes or until golden brown on top. Let it cool down and then cut it into small squares. You can save any extra squares for later snacking!
3. Now for the ice cream. In a large mixing bowl, beat the heavy cream until stiff peaks form. Add the sweetened condensed milk and vanilla extract and continue beating until well combined.
4. Fold in the mashed strawberries and chopped strawberries (if using) until well combined.
5. In a large freezer-safe container, layer the shortcake squares on the bottom. Pour the ice cream mixture over the top and spread it out evenly. Cover with plastic wrap and freeze for at least 6 hours or overnight.
6. When you’re ready to serve, take the container out of the freezer and let it sit at room temperature for a few minutes to soften up. Scoop it into bowls or cones and garnish with fresh strawberries!

1. First, let the ice cream sit out at room temperature for about 10 minutes to soften up.
2. In a mixing bowl, combine the softened ice cream and strawberry jam until well mixed.
3. Line an 8-inch square baking pan with parchment paper. Spread the ice cream mixture into the bottom of the pan and freeze for at least 4 hours or overnight.
4. In a separate mixing bowl, beat the heavy cream and vanilla extract until stiff peaks form.
5. In another mixing bowl, combine the crushed graham crackers and melted butter until well mixed.
6. When the ice cream is frozen, remove it from the pan and cut it into squares. Sandwich each square between two graham cracker halves and dip the edges into the whipped cream mixture.
7. Freeze the bars for an additional hour or until the whipped cream is firm.
